Felicity and Charlotte set up
The Palm Beach Clubhouse
in 2006 and over the last few years
have built the venue up to be recognized as one of the best dining
destinations on Waiheke. See our 2008 review in Metro. Using that
expertise and local market knowledge they have been able to create a more
casual dining venue in the heart of Oneroa village.
Our young chef de jour, Tony Moss is an inspiration! In his previous
roles as Head Chef for Stonyridge Vineyard and Ridgeview Estate he brings
a wealth of experience in creating a menu suitable for fine dining blended
with the casual eating style of the Skinny Sardine. Tony is both creative
with his food and switched on with the business side of things running the
kitchen for both the Skinny Sardine and the Palm Beach Clubhouse.
We couldn’t have secured a better front of house manager. Peter has spent
the last 20 years excelling in hospitality service working for some of the
finest establishment in Auckland. For the last 4 years he managed another
island icon, The Sandbar, before taking a break from the beach to run The
Bar at
the Chateau. Now back on the island Peter has responsibility for the
front of house for both the Skinny Sardine and the PBC.
